Orange Pineapple Tapioca

You know those days when you want to have a little something sweet, but you don’t want to serve dessert?

I have the perfect dish for those times.

You have to shop carefully for this recipe or it will be loaded with sugar and calories.

Choose mandarin oranges in light syrup (or in juice, if you can find them), pineapple in its own juice, sugar-free jello, sugar-free, fat-free pudding mixes, and light or fat free whipped cream for the lightest possible dish. I fall somewhere in the middle because I’d rather stay away from artificial sweeteners.

I don’t know anyone who can eat just one dish of this fruity dessert.

Maybe I know the wrong people.

Maybe it’s just that good.

Orange Pineapple Tapioca

Ingredients
  • 3 cups water
  • 1 small box of orange jello
  • 1 small box of instant vanilla or French vanilla pudding
  • 1 small box of heat and serve tapioca
  • 8 oz can crushed pineapple, drained
  • 15 oz can mandarin oranges, drained
  • 8 oz container whipped cream, thawed

Instructions
  1. Boil 3 cups of water in a small saucepan.
  2. When it comes to a rolling boil, whisk in the jello, pudding, and tapioca mixes. Make sure each box is completely dissolved before adding the next.
  3. Boil for one full minute, then remove from the heat and cool.

  5. In a 3-quart mixing bowl, combine the pineapple and oranges. (Drain them first! I forgot to, and my pudding is more like a thick milkshake. It still tastes great, but its consistency is all wrong.)

  7. Pour in the Jello mixture.

  9. Fold in the whipped cream.
