Roasted Beets with Feta Cheese

I love to eat beets.

There’s nothing finer than my Grandma’s pickled beets, and I’ve had a few salads at fancy restaurants that contained beets. I’ve never tasted a beet that I didn’t like.

I bought some beets at our favorite farm market this weekend, but I wasn’t sure how to cook them properly.

I asked on Twitter, and almost immediately, Hannah, Shannon, and Heather responded to say that I should roast them.

So.

That’s what I did.

Looking in my pantry, I grabbed a few things that I thought would go well with the beets.

Roasted Beets with Feta Cheese

Roasted Beets with Feta Cheese
Ingredients
  • 2 pounds of beets
  • Balsamic vinaigrette (you could also use plain olive oil and balsamic vinegar)
  • 6 ounces of crumbled feta cheese
Instructions
  1. Clean and peel the beets. Cut into 1-inch chunks.
  2. Toss the beets with a generous amount of balsamic vinaigrette.
  3. Wrap the beets in a large bunch in foil. (I didn’t do this, and I thought my beets were a little on the dry side. I’m going to do it the next time to prevent that.)
  4. Roast the beets at 375 for 30 to 60 minutes, until tender. (My smaller pieces were done in 30 minutes, but the bigger pieces weren’t done until about 60 minutes.)
  5. While the beets are still hot, toss them with some additional vinaigrette and the feta cheese.

I ate these beets hot (for dinner) and cold (for breakfast the next day), and I thought they were tasty both ways.

The only beets I’ve ever had are jarred pickle beets from the grocery. These sound delicious. I may have to break out of my comfort zone and give them a try.

I love roasted beets, too, Tara, and am posting this week about them, too. :-) I actually freeze them after roasting so I don’t have to eat them all at once (I’m the only one in my family that likes them) and they come out perfectly.

I’ve never eaten beets, but I’ve been considering it. Roasted is my favorite way to make any veggie and that’s my plan with beets, if I work up the courage :-) I think serving all those Harvard beets when I worked in cafeterias turned me off. I can’t even look at cooked spinach or greens for the same reason. Of lime jello with a dollop of mayo – yuck! The older people loved all of those foods though.

I have to be honest, Tara. Beets is THE ONE food I have never liked. Seriously – I am such a friend of food! But, I just don’t know what it is about beets. I haven’t been able to eat them. Even as an adult. Isn’t that silly. I bet, if I ate your beets, roasted and with feta, it may be a “game changer”, as they say. Hee hee.
Even though, it’s not my thing… I am SO glad you shared your recipe and linked to TMTT. :-)

LOL! I hate sweet peppers, so I totally understand a longstanding food aversion. I’ve tried them many different ways, and I just don’t like them.
I think I could eat anything if there’s enough cheese on it, though… and feta is as good as any.

I was not a beet fan until I made a beet loaf and a beet salad and now I am ready for beets. I love feta and I can justs picture roasted beets with feta. Yum. Thanks for sharing this and for linking it to My Meatless Mondays. I think this is your first link and I hope you will share with us again.

You know, I almost bought some beets at the farmer’s market then I talked myself out of them because I’ve never made them before and was afraid I’d just let them sit in my veggie drawer and get squishy. Now I regret I didn’t go ahead and buy a few. Well, tomorrow’s another market–perhaps I’ll be bold and try roasting them. I love the ideas you had to add flavor and texture!
