There is a groundhog devouring our cucumber plants, so we haven’t harvest a single one yet. Lots of zucchini, loads of leeks, handfuls of green beans, but not a single cucumber.
I’m sad about the lack of cucumbers. They’re one of my favorite veggies.
Ideally, the fresh ingredients for this recipe could come from your garden. If you don’t have a garden, or a large rodent is eating yours, get them from a local farm stand if you can. They’ll taste better than the ones at the grocery store.

| Greek Salad |
- 10 cups of salad greens (we grow several kinds of leaf lettuce or buy spring mix)
- 1 can artichoke hearts, drained and chopped
- 3 to 5 slices bacon, cooked and crumbled
- 6 ounces feta cheese, crumbled
- 1 can black olives, drained and chopped
- 8 ounces mushrooms, sliced
- 1 small red onion, chopped or diced
- 2 small cucumbers, sliced in half rounds
- 1 large tomato, chopped
- Freshly grated Parmesan & Romano cheeses
- Gazebo Room Greek Dressing (by far our favorite; if it’s not available where you live, you can make your own or buy a Greek dressing that you like)
- The instructions for this recipe are sort of embarrassing. Put the greens into a large bowl first, and then pile everything else on top.
- Toss it together but don’t add the dressing until the very last minute. We usually let everyone add their own dressing after they’ve taken what they want.

What is it with groundhogs and cucumbers? We have one, too! I’ve only been able to harvest 2 before they got them. They also got my first 2 yellow squash. Grrr. This salad looks divine!

I LOVE Greek salads.When I was pregnant with my son I craved these… now he can't get enough feta cheese. Coincidence? I need to make this very soon.

You can make your own greek dressing:
throw the following in your blender
1/2 c olive oil
1/3 c balsamic vinegar 3 or 4 cloves of fresh garlic
1 t dried oregano
big squirt of anchovy paste
handful fresh parseley
big scoop dijon mustard
blend until smooth
Pour into container with 4-8 oz crumbled feta cheese, and 1 cup plain yogurt. You won't believe it!
