Chicken Bacon Quesadillas

I saw this recipe on the Pillsbury website last week, and I had to try it.

I loooooove quesadillas, and I have a fancy little quesadilla maker at home. I adjusted the recipe a wee bit to fit my quesadilla maker, but you could make it on an indoor grill like Bev did.

Ingredients
  • 8 ounces sour cream
  • 4 green onions, thinly sliced
  • 1 ounce ranch dip mix
  • 1 cup chunky salsa
  • 1/4 cup peach preserves
  • 3 tablespoons chopped fresh cilantro
  • 1/4 pound sliced roasted chicken, chopped
  • 3/4 cup shredded Mexican cheese blend or crumbled queso blanco cheese (3 ounces)
  • 8 slices precooked bacon, chopped
  • 1 can (16.3 ounces) refrigerated buttermilk biscuits (8 biscuits)
Instructions
  1. In a small bowl, mix sour cream, 1 sliced green onion, and 1 tablespoon of the ranch dip mix.
  2. In another small bowl, mix salsa, preserves, and 1 tablespoon of the cilantro.
  3. Heat quesadilla maker and spritz with non-stick cooking spray. Meanwhile, in a medium bowl, mix chicken, cheese, bacon, remaining green onions, remaining cilantro, and remaining ranch dip mix.
  4. Separate dough into 8 biscuits; press or roll each into a 5-inch circle. Place 1/4 cup chicken mixture on one side of each biscuit circle. Fold biscuit over filling; press edges to seal.
  5. Place biscuits, two at a time, on grill. Close and cook 2 to 3 minutes until golden brown. Cut each quesadilla into 3 wedges.
  6. Serve with sour cream and salsa mixtures.

Oh, they do!

It was a Walmart find many years ago. I think I paid $5 for it. We don't use
it a ton, but it's very handy when we do get it out. :)

WOW! What a killer recipe. At first I was like “What do quesadillas have to do with Pillsbury” – but it's genius. I am not quiiiite so sold on the preserves…but either way I'm sure they're fantastic!

This is a spectacular recipe! I love quesadillas too! Bacon, peach preserves and ranch dip. What's not to love? I see why you had to make it, now I do too!
