		<description>MMMM. I love zucchini in anything. Have you ever tried zucchini fritters for breakfast? Just shredded zucchini, parmesan cheese, salt and pepper, bind with some egg, and pan-fry. Delish.

I have a harder time b/c my DH won&#039;t eat zucchini. I try to get smaller ones so I can eat it all by myself. But hopefully soon my little one will be helping me eat the good veggies my DH doesn&#039;t like!

		<description>mmmm, zucchini and onions with eggs are one of our favorite breakfasts around here. I have also used asparagus, spinach and fresh green beans. Any of those makes a delicious omelette or fritatta.
