Cool Cucumber Salsa

I have a little mirror attached to the rearview mirror in my car. It telescopes and twists and turns so that I can keep an eye on my babe while I’m driving.

I picked up our CSA share today, and I set the bag on the back seat as I do every week.

This week, when I got in the front seat, I saw something that really made me laugh.

Cucumber! Nom nom nom! Cucumber!

I didn’t scold her or take it away because – seriously? The kid grabbed a fresh cucumber out of the bag and starting eating it! It was a parent’s dream.

She crunched that cucumber the whole way home.

In honor of Gracie’s sudden affection for cucumbers, I am reposting my cucumber salsa recipe. It’s dee-licious.

Cool Cucumber Salsa

Ingredients
  • 2 medium cucumbers, peeled, seeded, and chopped
  • 2 medium tomatoes, chopped
  • 1/2 cup chopped sweet pepper (we’ve used green, red, and purple at different times)
  • 1 hot pepper (we’ve used jalapenos and hot hungarian wax)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons lime juice
  • 1 teaspoon minced fresh parsley
  • 2 teaspoons minced fresh cilantro
  • 1 1/2 teaspoon minced fresh dill
  • 1/2 teaspoon salt
Instructions
  1. Mix everything together in a large bowl. Cover and refrigerate for at least 1 hour.
  2. Serve with your favorite chips. Also makes a nice pico de gallo garnish for meat or tacos.

Janet – An appliance? Do you mean a food processor or something? I use a very fancy appliance called a sharp knife, so I probably am not the right person to ask. :)

I’m a little behind on reading blogs *hangs head in shame*

Ladybug did something similar the last time we went to the farmer’s market. Sadly, we have no local CSA, but 2 great markets, so I’ll live. I took the nieces to the market as a little field trip during Cousin Day Camp.

Anyway, I let the older girls pick out some fruits and veggies to buy, showed them which ones needed to be weighed, etc. Ladybug kept saying “green bean! green bean!” So I handed her a raw green bean and she happily munched away while I paid for our goodies, walked backed to the car, and drove home! Loved that!
