Asparagus Mimosa Salad

Spring is asparagus season. The asparagus patch that I helped my dad to plant is just beginning to produce the tasty spears, and they are starting to show up in farmer’s markets in my area.

I love to roast asparagus and use it in this gorgeous salad.

Asparagus Mimosa Salad

Ingredients

Vinaigrette

  • 2 tbsp lemon juice
  • 2 tbsp white wine vinegar
  • 2 tbsp olive oil
  • 2 tsp Dijon mustard
  • 1 tsp sugar
  • 1 garlic clove, pressed
  • 1/4 tsp salt

Salad

  • 1.5 pounds asparagus spears, trimmed and cut into 2-inch pieces
  • 2 tbsp olive oil
  • 1 hard boiled egg, sliced
  • 1-2 cups couscous, prepared (optional)
  • 1/4 tsp ground black pepper
Instructions

Vinaigrette

  1. Combine lemon juice, vinegar, oil, mustard, sugar, pressed garlic, salt and black pepper.
  2. Whisk until well blended.
  3. Cover; refrigerate until ready to use.

Salad

  1. Heat oven to 400. Spread asparagus in a shallow baking pan. Drizzle with oil and toss to coat. Cook until tender, 15 to 20 minutes. Allow to cool.
  2. Mix asparagus with couscous if desired; top with egg.
  3. Drizzle with vinaigrette; serve immediately.
Notes

If I’m cooking for just Joe and myself, I mix the salad all together. If we’re cooking for others (as we will be for Easter dinner), I serve the dressing on the side.

This sounds good. I’ve actually been in the mood for asparagus lately. I can’t wait until the farmer’s markets around me to start opening. I could go every day!
