Quick & Easy Chocolate Banana Cream Pie

Yesterday, Joe, Grace, and I spent the day running around. We went to the science museum, went shopping, and had a very late lunch at one of our favorite restaurants, Duke’s. All three of us left Duke’s stuffed, and no one was thinking about dinner when five o’clock came.

We still weren’t starving by 7, but I thought a bite of dessert would give us the chance to sit down around the dinner table for the illusion of a family dinner.

I looked in the pantry cupboard, and I found all sorts of baking ingredients. Being that it was already seven, though, I didn’t have time to prepare and bake something.

Plus, I was hoping to make something that had at least a hint of nutrition. A chocolate cake – not so much. Here’s what I came up with. It took me just a couple of minutes from start to finish.

Quick & Easy Banana Cream Pie

Ingredients
  • 2 boxes of sugar free, fat free Jello banana cream instant pudding
  • 2 cups milk
  • 8 oz Cool Whip Lite
  • 1 bag of semi sweet chocolate chips
  • 1 bag of white chocolate chips
  • 1 pre-made chocolate graham cracker pie crust
  • 1 banana
Instructions
  1. I used a 2 quart bowl to whisk the 2 boxes of pudding with 2 cups of milk for 2 minutes, more or less according to the package directions. Once it was all whisked, I folded in the whole container of Cool Whip Lite, a handful of chocolate chips, and a handful of white chocolate chips.
  2. I poured the whole pudding mixture into the pie crust. If I’d had some hot fudge, I think it would have been wonderful to spread in the bottom of the pie crust before I put the pudding in.
  3. Slice a banana into thin slices and arrange on top of the pudding. Sprinkle with chocolate chips if desired for desired.

This sounds really good. I have done something similar with chocolate pudding and the fat free cool whip, but love the idea of the choc. chips and bananas. I also think it would be awesome with the hot fudge on the bottom. I think I have everything..I may make it tomorrow after I get more milk!! Yummy
