Broccoli, Cheese, and Rice Casserole

I do not know where this recipe came from, Dear Reader.

I got it from a friend, who got it from a friend, who’d also gotten it from a friend. It’s like a chain letter, only you’ll love it.

Broccoli, Cheese, and Rice Casserole is supposed to be a side dish. It’s delicious and flavorful. It also makes a filling main dish if you throw in eight ounces of shredded chicken or pork. Add a salad, and you have a light lunch or dinner for a small family!

We make Broccoli, Cheese, and Rice Casserole at least a few times a month. It’s equally good with frozen and fresh broccoli, too, in case you’re wondering.

Broccoli, Cheese, and Rice Casserole
Print
Ingredients
  • 1 cup uncooked instant rice
  • 1/2 cup chopped onion
  • 1/4 cup fat-free milk
  • 4 ounces light Velveeta Light, cubed
  • 2 tablespoons butter or stick margarine, softened
  • 1 pound broccoli, chopped (if using frozen, it should be thawed and drained)
  • 1 (10-3/4-ounce) can condensed reduced-fat, reduced-sodium cream of mushroom soup, undiluted
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine all ingredients in a large bowl, and spoon mixture into a 2-quart baking dish.
  3. Bake at 350 degrees for 45 minutes.

This looks yummy! I found a recipe for “cream of …” soup I’ve been wanting to try. I can’t help but think it’s lesser expensive to make it myself, ya know? I found this page for homemade toddler recipes that made me think of you. Not sure if you’ll find some use for it or not but thought I would pass it on :O)

I love this casserole! My recipe calls for cheese whiz instead of velveeta, though. Unfortunately, my husband doesn’t like rice OR broccoli, so I only get this at holidays!
