How to make oatmeal, Feels like home style

Have I mentioned that there’s a recipe contest going on over at Saucy Eats? I was vying for first place until yesterday, and now I’m barely hanging on to second. I did.
Today was the first teacher day of school, and tomorrow is the first student day. Combine that with being home from the beach for almost two whole days now, and I’m a little stressed  taxed overwhelmed depleted.

In lieu of a fancy and wonderful recipe, I’m going to share with you what I had for breakfast this morning. I enjoy a good bowl of oatmeal pretty much every day,
 and it is both satisfying and filling. It holds me ’til lunch, a feat that most breakfasts don’t.
I’m not one for convenience food. It’s too expensive, has too much salt and sugar, and has too many preservatives. Oatmeal is one of those things that’s just as easy to make from scratch, so no packets here!

Oatmeal, the breakfast of champion teachers

Ingredients
  • Instant oats, the kind that come in a big cardboard tin
  • Water or milk
  • Jam. Homemade is best, but isn’t it always? Commercial will work, too, if you don’t happen to have 3 dozen or so jars of the homemade stuff just lying around. You could also use brown sugar, caramel sauce, hot fudge, gumdrops… Heck, use whatever you think you might like. Experiment! I’ve even used candy coated roasted almonds. Oh my, was that ever good!
  • Cool Whip Lite (optional)
Instructions
  1. Measure out 1/4 cup of oatmeal into a microwave safe bowl and then pour in 1/2 cup of water. If you’re really hungry, or won’t be eating for say five hours, double that. For school, I make 1/2 cup of oatmeal and 1 cup of water. Days when I’m home and have a morning snack, I go with the smaller amount.
  2. Cook the oats according to the package directions. Mine say to cook them at half power for 3 minutes, but yours may say something different.
  3. While the oats are still very hot, stir in a tablespoon or three of jam. Taste and add more jam if you think it’s necessary. Repeat until the oats are as fruity and sweet as you like.
  4. Cool Whip takes the whole oatmeal breakfast to a whole new level. I like to add about 3 large, overflowing tablespoons myself. I am currently out of Cool Whip, so I have been eating my oats without, and they’re quite good that way, too.

Sorry, I couldn’t resist. :)

Thanks for reminding me that instant oatmeal doesn’t have to come in 2/3 serving paper envelopes. One packet is never enough, and two makes my tummy ache!

The cool whip is a fun idea! I wonder how it tastes in Cream of Wheat….
