Crockpot beef stew

Joe made crockpot beef stew for supper last night. It was delicious, even if a little high in points. Joe and I sat down to eat, and I offered Grace sweet potatoes and corn. She refused both.

On a lark, I offered Grace a small piece of potato out of my stew. She gobbled it down. Same with a piece of carrot. I even gave her some of the roast beef, and she ate it all hungrily. By the end of the meal, Grace had eaten half of a cup of beef stew. I guess that was her way of saying that she’s now moved on to grown-up food.

Here’s the recipe for Joe’s yummy stew, in case you’re interested -

Crockpot Beef Stew

Ingredients
  • 14 1/2 fl oz College Inn Fat-Free Lower Sodium Beef Broth
  • 1 tsp Worcestershire sauce
  • 1 bay leaf
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1 1/2 tsp table salt
  • 1 large onion, chopped
  • 4 medium potatoes
  • 16 oz baby carrots
  • 2 pounds lean beef round
  • 1/4 cup all-purpose flour
Instructions
  1. Place meat in crockpot.
  2. Mix flour, salt and pepper and pour over meat.
  3. Stir and coat meat with flour.
  4. Add remaining ingredients and stir to mix well.
  5. Cover and cook on low for 9 hours or high for 5 hours.
  6. Before serving, make 12 oz of whole wheat wide noodles. Serve stew over noodles.
Notes

11 WW points per serving. Serves 7 (2-cup servings).

Mmmm… that’s just what we need in our house. Baby-friendly adult meals! Unfortunately, it’s a little warm for stew in our parts these days. Sounds yummy though!

Hey, Tara, did you add the word verification because you got spambot comments, or just for fun? I’ve been curious if I can take it off of mine — somehow I feel like I’m deluding myself to think I get enough traffic for a bot to find me!
